I have a 1988 41C, 6V92. I was under the impression these were 550hp. I thought that was pretty much the only configuration they put in these boats.

Looking at my rocker arm covers, it say the motor is 332HP @2300. IS this correct, did these ever go in these boats?

According to the last overhaul invoice she has 7125 injectors

OMG, 6V92s came with so many mild to wild HP configs. We can guess all day.
The factory config is in your serial number.
Copy both Serial numbers to your REAL DDC shop. They can tell you what they were when delivered.

Valve covers, tags and labels can be moved around. The block serial number tells what was delivered.
From there, compare delivered injectors to upgraded part numbers.

Model Numbers 8062-3403 (Port) & 8062-7403 (Stb) were the 550Gross (535 shaft) HP 6V92 TA/B engines.
