I have some scratches on the hull that are not going to "rub out". Thinking of grinding out slightly and then using gelcoat as it will sand and buff to a shine. (I will tape off carefully to keep it as small as possible.

Color of course is key. Has anyone tried "oyster white" from Jamestown? Or get white and try to mix my own color with some light brown coloring agent?

You're making alarms go off in my head. Hire a pro. Bear in mind that you may not spray anything, even a rattle can, at Piney Narrows Yacht Haven.

Was not planning on spraying anything. But thanks for pointing that out, I was not aware.

Depending on the depth of the scratches I would be tempted to fill the scratches with a high build primer then go over the top with a Hatteras off-white. We had a auto paint store in town that would mix a semi-gloss and put it in a spray can. I never had much luck with gel coat. If you have a where are you to flatten the gloss the repair will be less obvious

I don't think gelcoat is going to stick to the paint very well (if at all). Fix/fair the scratch primer (possibly high build) then spray with topcoat, wetsand and buff.
