My boat knifes never seem to be sharp enough so I'm looking for any sharpener recommendations. Nothing worse than trying to filet a fish (and people watching) with a crap dull knife.

I've tried all the sticks stones and everything else. The only thing that works is the diamond blocks.
 
Electric fillet knife. Fast and easy.

I'm a nut for sharp knives and this tool comes darned close to anything I have seen in some custom knife shops that I have visited. That said the dexter stones are great for tuning up between uses.

All these pro guys tend to use a 30" bench top belt sander but keeping true to the correct angle takes practice and skill.

This company makes a pretty cool mini belt setup with some cool angle guides that are easy to follow for less than a hundred bucks.

If you get it right and use the strop blade, be careful because the blades come out at a surgical or razor condition... almost too sharp to leave in a drawer.
 
That's a slick looking tool - and a good price. I may have to buy a new toy.

I have one of those too and it's pretty good, took me a few times to get the touch right but now I cut my fingers with the kitchen knives regularly. Always keep band-aids near the chopping block.
 
Just FYI you don't want a fillet knife too sharp because it will cut into or thru the bones.

I always thought too sharp was sort of like too rich or too thin... :)
