Okay, a bit late but here goes....
I have busted 4 Henkels and 3 Wusthofs in 20 years (commercially) I ahve also had many of the stolen as well (darn $$$$$) Last set of "knives" I used commercially were from a flea market. Great knives, cheap, kept an edge etc... Lost them in NYC when they broke a window and took the whole bloody toolbox (over a grand of equipment in there. Can anyone say Mandoiline, 3 stone sharpener...)
What would be the use of the cleaver? I like them for splitting things, but otherwise they look good if they are heavy! As for a good cleaver, think a Chinese Knife.. Your choice about carbon steel or not (they both rust).
Also, take the Admiral with you. If you get one that is comfortable for you it might not be for her. Weight is everything and then balance. If the Cleaver is too heavy then it will again not be used.
Of course I am now very partial to knives from Japan... PM for a place to get a catalog if you want.
As for Guru... Angela can out cook me anyday!!!! Unless we are talking Hundreds LOL
