My wife wants a cleaver for V-day. Any suggestions on quality knives, also the best cleaver size? I am leaning towards the 7" Wusthof Classic.

But seriously, Wusthof or Henckels are both good knives. You probably can't go wrong with either.
 
I have always been a fan of the true commercial knives sold through real kitchen supply houses. The Cleaver is one of my least favorites as I never really found it to be very useful. I have a few large chefs knives. All High carbon steel. Each one bought because I liked the feel and I never looked at the names when I bought them. The favorite is a Brazilian made one if I remember right. I also have a few utility knives like boning knives and carvers but the chefs knives get the most use.

IMO Cutco makes the sharpest, most well manufactured knives ever made. They come with a lifetime warranty for all the knives no matter what happens to them. My girlfriend used to sell them and they are far superior to any knives Ive ever used. They make every knife you can think of, so look into them :)
 
In addition to my Wusthof, I also have Cutco knives and they are great knives, too. I can say that I highly recommend Cutco too. I have a lot of those.

I mostly use my Wusthof Santuko, but there are some knives that are purpose oriented where no other substitution will do. My Cutco boning knife is one example, as well as the bird's beak for making garnishes. I've never thought about needing a clever, but one of my Santuko knives is quite large and heavy. I have many sizes of those.

Sky, That's scarry!! I mean giving your wife a meat cleaver. I worry about getting hit on the head by a frying pan. You sure don't want to anger her after the meat cleaver gift! I am amased by how much you folks know about knives. I always carry a good pocket knife, because I don't cook I need nothing larger. I change oil, Jane cooks, I eat.:)

I like the cleavers as well, Wally, the Beav, Ward AND June!

As far as knives go, all SS knives are objects d' trash. Accept only carbon steel.
 
Well the whole cleaver thing came up because a friend recomended a place we could purchase a whole pig and have it butchered. This pig turned out to be the toughest meat I have ever tried to chew. Soooo, my wife has been getting in to making sausage, jerky and other smoked meats. The cleaver will make short work of the tough little piggy then we can get it in the grinder.

Okay, a bit late but here goes....

I have busted 4 Henkels and 3 Wusthofs in 20 years (commercially) I ahve also had many of the stolen as well (darn $$$$$) Last set of "knives" I used commercially were from a flea market. Great knives, cheap, kept an edge etc... Lost them in NYC when they broke a window and took the whole bloody toolbox (over a grand of equipment in there. Can anyone say Mandoiline, 3 stone sharpener...)

What would be the use of the cleaver? I like them for splitting things, but otherwise they look good if they are heavy! As for a good cleaver, think a Chinese Knife.. Your choice about carbon steel or not (they both rust).

Also, take the Admiral with you. If you get one that is comfortable for you it might not be for her. Weight is everything and then balance. If the Cleaver is too heavy then it will again not be used.

Of course I am now very partial to knives from Japan... PM for a place to get a catalog if you want.

As for Guru... Angela can out cook me anyday!!!! Unless we are talking Hundreds LOL
