As far as an inspection plate, yes thats a good idea. You could make it out of clear plastic and see through it. You could put a rubber gasket all around the edges to seal it and keep the water from leaking into the keel void maybe. I chose to just leave mine open all the way and install a plastic tote box I cut in half

This way I just lift the box up a see whats in there. I know there is lots of closed cell foam so once you remove the water from what you can see (under the shower sump) then its possible water can migrate aft when in a sea condition. I vac'ed mine out twice, that was all. I thought it was rain water because I wasnt using my aft show at all. I kept the sump dry so I know it wasnt shower water. We normally use the fwd shower because its bigger. The black box I installed prevents any possibility of water intrusion from the shower to the keel. So far so good. I am keeping an eye on it though.
