Replacing 32V light fixtures

This may be a stupid question but what is to prevent me from going to Lowes and buying two new light fixtures that are 110 and wiring them up to my 32v wiring with a 32v bulb in the socket?

nothing, just make sure that the wattage rating on the fixture is high enough for the lamp that you are going to install in the fixture. If you look at the fixtures on your boat now they all are rated at 120v.
