I have to remove a full size amana fridge from my 1972 Hatteras. Only way to remove is by cutting down with sawzall. The fridge is a 120 hardwire to the fuse box. Can I put a gfci on that wiring to plug in my new fridge?
 
Installing a 115Vac outlet plug would be good if your thinking access is going to be common. Consider interference height when figuring it's location. You don't want the fridge crushing it when slid back.

A GFI? Hummm
If the usual placement of the outlet is behind the fridge, you would have to slide the fridge out to reset it, if/when it ever trips.
Under an adjacent counter, unload a bunch of stuff to get to it? Errr

Then, years from now, you have a dead fridge issue, you or next owner will remember there is a GFI in use??

You probably have a dedicated breaker for the fridge. Pending your breaker design, can you install a GFI breaker?

Personally, I would lean toward a hard wire install. Keep It Simple and reliable.
 
My old fridge as well as the range were hardwired and on separate breakers. I installed outlets instead but not GFI. No need for that

To make things worst, the G and N were bonded together… guaranteed to trip shore power at new marinas. It wasn’t an issue 15 years ago…
 
I put in a new refrigerator and dishwasher over the weekend. Both were hardwired, so that is how I reinstalled the new ones. Fisher and Paykel makes a countertop depth refrigerator that seems to fit spaces for these old Hatteras. I would not have had room to put an outlet behind the fridge. It fits, but it just fits!
