It would seem that there is enough room to reposition the two twins, flip the bed 90 degrees and turn the midship stateroom into a single full size bed.
anyone ever done that? Photos?

What kind of issues?
The AC return under the middle drawers is a no-problem thing to reroute.
There's nada under the bunks but storage - right?
The deck hatches could still be accessed.

Ya'd lose some drawer storage, but make it up with storage along the forward wall under the "new" full size bed.

Or am I missing something?

I've not looked through the plans for a 1988 60 MY (this is the 67 CPMY version of the 60) Hull ## "DK"
 
My mid has that option. I’ll take some pics tomorrow when I get down.
 
Are size boat and model are you asking about. My 53’ has a water tank under one of the beds.
 
I guess it could be done on a 60MY/67CMY - only thing below bunks are drawers and evaporator (outboard bunk). As you point out, the AC return is below the middle drawers/night stand so you would have to address that too. The forward of the bilge hatches might be hard to get to - it's where the port side bilge pump sits and is a low point so you might consider keeping access to it somehow.

I am about halfway through with doing just this.

As it happens on my 52C, the single bunks are detachable and freestanding, so I pushed them together as a base for a queen mattress from Costco.

Even though only one set of underneath drawers is currently visible, the other is unmolested.

My goal is to make it possible to attach them when needed as a queen base, and still be able to separate the bases to return each to single units in the original locations on some occasions.
