Boat is 1985 45c.
Dockside post has 50A/120V.
Boatside inputs are 30A/120v and 50A/120v-240v.
I have been running on the 30A for some time but very limited on what I can power at one time.
I have a 50A/120v-240v cord. If I get a 50A/120V adapter to go from post to cord, will that get me the 50A I need?

You will get 50 amps if that’s what’s on the pole. Can you check the voltage on the pole and make sure it’s not 220 volts. 50 amp 120 isn’t very common.
