We have a trash compactor for most things but always have a shopping bag for things that will get smelly that goes to the dumpster almost daily. We also keep a bag for recyclable items but unfortunately it seems to always end up on the dinette seat!

Re: Trash space
I can help on (2) of these issues.
Photo-1 is our 52C galley, you can see on the left under the cabinet the original ice maker location is
now a pull out trash can, With a full size refrigerator/freezer with ice maker no need for a dedicated
ice maker. You can also see there was a dish washer and trash compactor all original.
In later photos you can see the dishwasher removed for pull out storage drawers, wash dishes in
sink no need for dishwasher. Removed trash compactor for built in (2) zone wine cooler. these
additions were done using the original spaces left from old dishwasher and compactor. the wine
cooler was made specifically to replace the trash compactor with no modifications! On our boat 25
bottles of properly tempered wine trumps trash needs, also makes a good cigar humidor.
