I have heard of people disabling the second stage of carbs for fuel economy. That said I'd start looking at fuel as the issue if you see the butterflies open.
The last gasser I worked on was a buddy's 454s and he had a vacuum leak at the carb mounting gasket.
That was years ago too. Everything now is either injected or injected (diesel) in my vehicles.
Gas engines should have 2 components to run. Fuel and air. One is not enough by the sound of it.
Have you had a good mechanic look at it yet?
